Sweet Matzah Kugel

There is no doubt that Pesach is a food holiday. After all, we go shopping weeks in advance, stock up on things that at the time we definitely need but don't end up using, and cook up a storm throughout the entire week. 

I've noticed there are three types of Pesach cooks (some people [like myself] fall in between):
 
The Substituter - The type that tries to substitute all the chametz ingredients for less-good ingredients.
 
The Comfortable Cook - The type that has their go-to Pesach recipes made year after year.
 
and The Pesach Pro - The type that tries new things each year - the possibilities are endless. 
 
I like to think that this recipe will really cater to all three types of Pesach cooks. If you like to substitute, this recipe is a great substitute for your favorite kugel. If you're one for easy recipes that become instant favorites - read below. And if you want to try something new, making the best of great Pesach ingredients, today is your lucky day. 
 
This recipe is a serious favorite in my family. We know to stock up on all of the ingredients, because we make it more than any other Pesach dish. One year the supermarket ran out of Kosher for Passover sliced and slivered almonds, so instead I slivered whole almonds myself. Skip the recipe if I don't have the exact ingredients? Never!
 
This recipe is gebrochts, but I assure you it is just as good all year round.
 
Recipe amounts to an 8x8 square baking dish, but is easily doubled, tripled, or quadrupled :) 
 
 

Ingredients

3 Matzahs
6 Eggs
1/2 Cup sugar
1/2 tsp Salt
1/4 tsp Cinnamon 
1/2 Cup raisins (optional) 
1/2 Cup sliced or slivered almonds
4 Apples, grated 
Juice from 1/2 orange
1/2 Stick of margarine, melted
Cinnamon sugar and vanilla sugar
 

Directions

1. Heat oven to 350° F and liberally grease an 8x8 baking dish.
2. Run the matzahs under warm water and drain in colander.
3. In a large bowl, beats the eggs. Add sugar, salt, cinnamon, raisins, almonds and mix well.
4. Crush matzahs into egg mixture and add grated apples - mix until everything is coated. 
5. Pour mixture into prepared baking dish - drizzle with melted margarine and juice from orange - then sprinkle with cinnamon sugar and vanilla sugar. 
6. Bake at 350° for 45 - 60 minutes. Serve warm.
