We're kicking off this with our Passover recipes. It's not to early to start thinking what you'll be cooking. We'll be featuring bi-weekly passover posts so be sure to come back and check often. Our first post is aptly  named the No Potato Passover. Banish those potatoes this holiday and welcome in exciting new recipes that will enjoy cooking all year round - CookKosher

I started experimenting with food and art as a young child, my first concoction assembled using my highchair as a pallet. Needless to say, my experimentation at that point didn’t produce a culinary or artistic masterpiece; but as a fiercely determined child, I persevered. It got to the point where my parents couldn't leave the house without warning the babysitter, "Make sure Aviva doesn’t cook anything!” Despite their warnings, they returned to a culinary surprise, every time without fail. Finally, after years of salty chocolate cake and carrots floating in water, I mastered a few dishes and I was able to cook my first successful shabbos meal at the age of twelve. 
From that point on, my journey continued and I kept dabbling in the kitchen. I loved the feeling of accomplishment when my challah dough rose correctly, or a cake came out of the oven perfectly light and fluffy. I began to recreate food I tasted in restaurants or stores (I had yet to learn the value of the term "home cooked”). The process was all so exhilarating! 
After graduating from the French Culinary Institute and finishing my degree in Studio Art from Hunter College, over time I became a visual artist, author, and chef. I combined all of these passions, as well as my love of travel, to bring you the No Potato Passover, a unique blend of flavors from all over the world. Not only are the recipes in this book easy and delicious, they are mostly "low carb" and gluten free due to Passover dietary restrictions and the challenge of this book.No Potato Passover is also a vibrant expression of my travels and intrinsic artistic sensibilities. I’ve certainly come a long way from my highchair concoctions, and I know that your journey to culinary creativity will be just as fun as mine has been.

    My Pesach shopping list usually consists of eggs, cottage cheese, and sweet recipe gefilte fish. I think I actually use eggs the most - they seem to go into just about everything. OY, my high cholesterol and Passover do not go so well together!

    I make my kids A LOT of matzah and egg combinations. However, my husband and I try to limit our egg and matzah intake and have developed a new "game" where we try a few new vegetarian dishes. If we are successful we carry the recipes over into our everyday. If we do not succeed, we blame it on the matzah meal!

    I would have to say that I use lots and lots of eggs during Pesach. Every year I promise myself that I'm not going to do special cooking for the holiday. For dinner, I can make a protein, a salad, a baked potato or sweet potato and a green vegatable. So why do I make all the Passover specialties we love so much? It certainly makes it a more fattening holiday, but we look forward to it every year.

    Eggs and eggs. The more veggies, I use, the less eggs, though so this is going to be a vegetable year. We will still have kugels and desserts.

    Tons of veggies. Especially asparagus, onions, sweet potatoes, cabbage and carrots. Eggs are always a go to as well as potato starch

    Eat clean so to speak, that is very similar to a usual menu but no bread or flour. Must admit we become honorary Sephardim and eat rice and such. My kids obsess with Matza Pizza but this year I may try Mirriyummy's husband's pizza recipe. I love to make a version of chocolate chewie cookies using 2 T of potato starch in place of flour.

    It seems that I run out of both matzah and eggs every year, no matter how many I stock up on at the beginning. Plus jam for all the matzah brei (and there go the matzah and eggs!).

    The most useds single ingredient is eggs like many people said but The largest group of foods I use are Vegetables. Most vegetables are kosher for passover so it's not fake food. I can use most of my regular recipes and some new ones. Just good, fresh and healthy food. Counter acts some of the cake and matza eating.
