I can eat a whole pan of this lasagna myself, it is so darn good!
1 (1 lb) Cottage cheese
¾ (26 oz) jar marinara sauce
1 cup shredded cheddar cheese
2 cup shredded mozarella cheese
1 (16 oz) bag frozen spinach, drained
1 (8 oz) box oven ready lasagna noodles
1 cup water
Combine cottage cheese, spinach, egg, cheddar cheese and ONLY 1.5 cup mozarella cheese. (Set aside the remaining half cup for later)
Cover the bottom of a 9X13 pan in a layer of marinara sauce.
Place a layer of lasagna noodles over the marinara sauce
Pour half of the cheese mixture on top of the noodles
Put another layer of sauce, followed by another layer of noodles and top with the rest of the cheese mixture.
Then you do another layer of marinara, followed by a layer of noodles and one final layer of marinara.
Sprinkle the rest of the mozarella cheese on top of the final layer of sauce.
Carefully, pour the cup of water all around the sides of the pan.
Bake at 325*F, covered, for 1 hour and 20 minutes
Let it cool for 15 minutes.
