INGREDIENTS













  • 1 kg Pack of Pasta fusili or penne










  • 3 Peppers (any color)










  • 3 Red onions










  • 750 gram Cherry Tomatoes










  • 3 Portobello Mushrooms (opt)










  • ½ cup Olive Oil










  • 3 Tbsp Garlic Powder










  1. Cook the pasta according to package instructions. Make sure its al dente.



  2. Slice the peppers, onions, cherry tomatoes and mushrooms. Place in 9 by 13 roasting pan. Pour the olive oil all over it, and sprinkle with garlic powder. Bake 350 for 35-45 mins.



  3. Combine with cooked pasta and mix well. Return to oven and let bake another 20 mins.
