The real secret to this delicious, light, moist, fluffy (you get the idea!!) cake is mixing the sugar/oil for at least ten minutes, and at least another five once the eggs are added. I know this recipe in my dreams by now, since as many times as I make it, my family requests it again... and again ... and again!!
2 cup Sugar
1 cup oil
2 Tbsp vanilla sugar
¼ cup coffee dissolved in ¾ cup hot water
2¼ cup flour
½ cup cocoa
2 tsp baking powder
Mix the sugar and oil on medium speed for 10-15 minutes.
Add the eggs and vanilla sugar, and mix another five minutes.
Add the coffee, and then slowly add the rest of the ingredients.
Pour into a bundt pan and bake on 350 for 50-55 minutes.
