Delicious carrot muffins with a cream cheese topping. This recipe is courtesy of "On the Go" at the Shell Station in Monsey NY.

INGREDIENTS













  • 3½ cup sugar










  • 2¾ cup oil










  • 8 eggs










  • 2 tsp baking powder










  • 2 tsp baking soda










  • 2 tsp cinnamon










  • 4½ cup flour










  • 2 tsp vanilla sugar










  • ½ cup orange juice










  • 6 carrots, grated










  • - TOPPING:










  • 4 (12 oz) cream cheese










  • 1 (4 oz) stick butter










  • 3 tsp vanilla sugar










  • 1 cup confectioner's sugar










  1. Muffin: Mix all ingredients. Pour into greased muffin trays.



  2. Bake in a preheated oven at 325F for 20 minutes.



  3. Topping: Melt the butter and and place it with all the ingredients in a mixer. Mix well. Taste and add more confectioner's sugar, if needed. Top the muffins with the topping and serve.

It came out so fluffy and most. I kept half parve to serve as a side dish and the other half I made with the cream cheese topping! Yum!!
