This version of roasted turnips has a warmth and sweetness that rivals a hug from your bubbe.
2 lb turnips (peeled and sliced, diced or chopped)
14 oz coconut milk (sweetened)
4 Tbsp unsalted butter or marg (melted_)
1 Tbsp cayenne pepper
1 pinch salt and pepper to taste
Preheat oven to 350
Peel and slice/dice/chop turnips and place them into a large bowl
Add melted butter, coconut milk and spices
pour mixture into your favorite casserole pan and bake in preheated oven for 45 minutes or until golden and bubbly.
