For those of us who need to lose a few pounds: make this for Shabbos and skip the potato kugel. I have made this using cauliflower for a change.
2 loaf pans
1 lb frozen broccoli
3 Tbsp mayonnaise
2 Tbsp flour
1 small onion, sauteed
Cook broccoli in water until soft. Drain well. Mash well using an immersion blender.
Add rest of ingredients and mix.
Line pan with parchment paper and pour broccoli mixture inside. Bake at 350°F for 45 minutes.
