These bars make for a healthy, tasty snack or breakfast on the go. They freeze well, so I usually double the batch and keep them around to send along with school lunches.

INGREDIENTS













  • 1½ cup uncooked oatmeal










  • 1 cup flour










  • ½ cup brown sugar, packed










  • 1 tsp cinnamon










  • ½ tsp baking soda










  • ¼ tsp salt










  • 1 cup orange juice (can substitute water)










  • ¼ cup canola oil










  • 1 egg










  • 1 tsp vanilla










  • 6 oz diced dried fruit










  • 2 Tbsp oats










  1. Combine 1 1/2 c oats, flour, sugar, cinnamon, soda and salt.



  2. Combine juice, oil, egg and vanill and add to dry ingredients. Mix well. Stir in fruit.



  3. Spread into a 9x13 pan that has been sprayed with no-stick spray.



  4. Sprinkle with remaining oats.



  5. Bake at 375 for 20-22 minutes or until lightly browned and edges pull away from sides of pan.



  6. Cool completely. Cut into bars. Store tightly covered. To freeze, place cut bars in ziploc and seal tightly.
