The process of marinating the fish makes it incredibly juicy, boasts a ton of flavor, and is super quick!
Best of all, it eliminates most or all of the mildly fishy flavor of tilapia if you don't like that kind of thing.
-Any other kind of "white" or "light" fish that is very mild when it comes to flavor can be used instead of tilapia. Of course, if you don't mind fishy fish, you could use any type that you like.
8 (4 oz) Tilapia Filets
1 Lemon (any size)
2 Garlic Cloves, grated or minced
¼ cup Fresh Parsley, chopped
2-3 Tbsp Extra Virgin Olive Oil
½-1 tsp Sea Salt
½-1 tsp Freshly Ground Pepper
Juice and zest the lemon into a resealable plastic bag, and add all the other ingredients. Let marinate for as long or as little as you like (the longer the better!).
Take the fish fillets out of the bag and place on an ungreased baking sheet. Broil under low heat until there are no pink parts on the fish, about 8 minutes. If they are done before then, take them out otherwise they will overcook and turn "rubbery" and lose most of their moisture.
Serve with a garnish of fresh parsley, and season to taste with salt and freshly ground pepper. Enjoy!
