I am not a huge fan of cranberries unless they are somehow cooked in massive amounts of sugar. Which of course, completely eliminates their beneficial qualities. Well this recipe proves me wrong!
¼ lb cranberries
2 tsp meringue powder
2 Tbsp water
1 cup sugar
Wash and completely dry cranberries.
Spread sugar on a large cookie sheet.
Whisk meringue powder and water together in a medium sized bowl. Place cranberries (all at once or in batches) in the meringue mix, and stir to coat. With a slotted spoon, remove cranberries, allowing excess mixture to drain. Drop cranberries onto sugared cookie sheet.
Shake cookie sheet back and forth to roll cranberries over sugar until completely coated.
Let sugared cranberries sit for a couple hours until dry.
