
Just like fries, but baked :-) My family loves this easy, healthy variation. This recipe is for a small family, easy to increase/multiply as needed.

INGREDIENTS
2 medium Idaho potatoes
2 medium sweet potatoes
ΒΌ cup oil (olive or canola)
1 Tbsp garlic powder (optional)
1 pinch pepper (optional)
1 Tbsp kosher salt
- optional: other spices to taste
Preheat oven to 400 F. (Higher should work too if you're in a hurry)
Peel potatoes. Cut in slices or french-fry style strips. Try to cut as evenly as possible so they will bake evenly (but leave the ends in their natural contours. The tapered ends make a nice crisp.)
Combine oil and spices (optional) in a large mixing bowl.
Toss potato pieces in the oil mixture until evenly and lightly coated.
Cover a baking sheet with parchment paper (foil will do in a pinch. I prefer paper.) Dump the potatoes onto it and spread to one layer. More than one sheet may be necessary; I have a pretty roomy cookie sheet and there is usually enough room for the stated quantity of potatoes.
Sprinkle with the kosher salt. (It is not necessary to use exactly a tablespoon, but you have to put quantities into the website so that's what I chose. Adjust to suit your taste.)
Put in oven and bake until crispy - they should start to brown and get darker around the tips/edges, but you don't want them to burn. Depending on your oven temperature this should take around 15 minutes. Pierce a couple of pieces with a fork, you want them nice and soft inside.
Remove from oven and serve while hot.
