I ate in an Indian restaurant while vacationing. When I returned home I recreated this side dish.
3 Tbsp oil
1 small onion, diced
1 cup raw rice
½ tsp turmeric
¾ tsp salt
⅛ tsp black pepper
2 scallions, sliced
2 cup water
Saute the onion in the oil until translucent.
Wash the rice very well. Add the rice to the onion and saute well. Add the seasonings and mix. Add the scallions.
Cover with the water and cook on medium flame for 20 minutes covered.
Let rice sit for 5 minutes. Fluff with fork and serve.
