I love all fruit desserts, be it cakes, muffins, crumbles etc. When I tasted this I knew this would become a favorite. Easy and delicious. I've served this cake at room temperature for a brunch menu and served it warm as a dessert. Either way it is great.
1 cup oil
2 cup sugar
3 cup flour
2 tsp baking powder
½ cup orange juice
1 (20 oz) can crushed pineapple
1 box fresh blueberries or 12oz. bag of frozen blueberries
1 (4 oz) stick margarine
1 cup flour
1 cup sugar- white or brown
1 tsp cinnamon
Combine the first 6 ingredients in mixer. Mix well.
Pour 1/2 of this batter mixture in a 9x13 baking pan. Drain crushed pineapple very well.Layer pineapple on top of this batter, then layer blueberries. Pour remaining batter on top.
Mix by hand or mixer the topping until crumb consistent. Sprinkle this mixture of top of cake batter.
Bake at 350 for l hour. This recipe can be made in individual pans;adjust baking time.
