I use this cupcake recipe in my business making special occasion cupcakes. They are moist and delicious and most of all are really quick to prepare. However, make sure to mix them using a mixer and not by hand as the cupcakes have a light and fluffy consistency when the batter is mixed in a mixer.

INGREDIENTS

2 eggs

1 cup oil

1½ cup sugar

1 cup orange juice

2½ cup flour

4 tsp baking powder

2 vanilla sugar

Mix all the ingredients in the mixer.

Pour into cupcake holders. The holders should be about 2/3 of the way filled.

Bake at 350* for 25 minutes.

amazing. thanks. although i did use spelt flour instead of white flour and eliminated vanilla sugar because i had none. i used apple juice instead of orange and reduced sugar to 1/2 cups and it was still delitioous. i will b''h make second batch tomorow. love it.

These cupcakes are delicious. They are very easy. I made 24 with chocolate chips and cinnamon and sugar on top. They look pretty and taste like the recipe was a lot harder than it really was.

My friends and family know that I like recipes that are easy to follow and don't make a mess. Well this one is a real winner on both counts and the cupcakes came out scrumptious!

If I could rate this more than 5 stars I would. It's a snowy day today in NJ and we needed an activity. My kids chose this recipe. I was out of OJ but we found a couple of oranges. I got 25 cupcakes. They were so good that I ate 2 cupcakes myself!

I made these once, and while they tasted delicious, they didnt look so nice. The cupcakes did not rise up high out of the holder and it was quite dense. Maybe its because I mixed them by hand instead of the mixer. Thank you for the tip and I love these cupcakes!
