This is a fantastic salad using Chicken Fajitas. I posted the recipe for the chicken so check it out in my kitchen or search for it. This salad is so good that make more then you think you will need. I sometimes put the salad into a pita or baguette for eating on the go, or take it with on picnics. Be sure to experiment and add all sorts of extras to the salad and make it a meal in a dish

  • 12 oz Chicken Fajitas (recipe is already posted)

  • 1 Pack lettuce

  • - large Croutons

  • ¼ cup oil

  • ¼ cup mayonnaise

  • 1 Clove crushed garlic

  • 1 tsp Mustard

  • ¼ tsp Salt

  • ¼ tsp Black pepper

  • ¼ tsp soy sauce

  1. The oil needs to be emulsified into the mayo, this can be a little tricky. Use a hand blender to blend the mayo and slowly, slowly add the oil. Use a good tall narrow blending cup for best result. As you add the oil it should be 'sucked' into the mayo and form a creamy white dressing.

  2. Add the garlic, mustard, salt, pepper and soy. It should now be a light yellowish creamy dressing, not oily. If it is oily then it is not emulsified right.

  3. I make homemade croutons by cutting leftover challah or baguette into cubes and baking it with olive oil, italian seasoning, tarragon and thyme. You can do that or just buy croutons, big croutons will work better in this salad.

  4. Mix the lettuce (cut into big pieces), chicken fajitas (cold leftovers is fine), croutons and dressing together. Add to the salad anything you like, tomatoes, red onion... My favorite addition is baked mini red or white potatoes. I bake them with spices and oil and then cut them and add to the salad
