3 medium potaoes peeled, cut lengthwise into 10-12 wedges
5 Tbsp oil
- salt and pepper to taste
preheat oven to 475 degrees.
place potatoes in a large bowl and cover with hot water.
line a baking sheet with foil. spread 4 tablespoons of oil onto foil and add salt and pepper.
drain potatoes, and toss with the remaining tablespoon of oil.
arrange potaoes in a single layer on baking sheet and cover with foil. bake for 5 minutes.
uncover the potatoes and bake for another 15-20 minutes- rotating every 10 minutes.
