
A really nice salad that has great taste and looks lovely. This can be thrown together quickly and goes well with any dinner; fish, chicken, or meat. The flavor and crunch from the topping really makes this a salad that is a wonderful addition to those special occasion meals. I ate this at my niece's home and she kindly shared her recipe with me.

INGREDIENTS
1 (16 oz) green cabbage
1 bunch scallions
1 (8 oz) dried cranberries
- dressing:
¼ cup oil
¼ cup vinegar-white
¼ cup sugar or substitute
1 tsp salt
1 tsp black pepper
- topping:
- chinese chow mein noodles
Mix in bowl cabbage and (cut up thinly)scallions. Add dried cranberries.
Blend dressing by hand. Mix dressing into bowl of cabbage mixture. Let sit awhile. Then when read to serve, place in bowl and sprinkle thin chow mein noodles on top of salad. Be generous, it really adds great crunch.
