Never a big fan of sweet potato pie until I tried this by my cousin's house. It is delicious but very sweet, so know your customers before you make it. The presentation is pretty.
4 medium size sweet potatoes
½ cup sugar
2 Tbsp vanilla sugar
½ tsp salt
½ cup non-dairy creamer
1 round pie crust
½ stick of margarine
½ cup flour
1 cup brown sugar
½ tsp water
Boil sweet potatoes in pot. When they get soft, drain and mash them.
Pour eggs, sugars, salt and creamer into the mashed sweet potato pot. Mix well
Pour mixture into the pie crust.
Bake for 1/2 hour at 350 degrees.
Combine the margarine, flour, brown sugar and water together in a bowl to make the crumbs.
After 1/2 hour of baking, take the pie out and add the crumbs on top.
Bake for another 1 hour at 350 degrees uncovered.
