This is a delicious, soft kugel almost like a souffle. I make it for Shabbos almost every week.

INGREDIENTS













  • 3 large zucchini










  • ½ cup oil










  • 5 eggs










  • 2 tsp salt










  • 2 large onions - chopped










  • 1 black pepper to taste










  • ¾ cup flour










  1. Wash zucchini. Cut off off ends. cook on low flame in 2 inches of water until soft.



  2. Cool zucchini in sieve. squeeze out remaining liquid.



  3. preheat oven to 350 degrees. Prepare 9x13 pan with cooking spray.



  4. In a large bowl, mash Zucchini and add oil, eggs, salt , pepper, chopped onions (raw) and flour.



  5. Mix well and pour into prepared pan



  6. Bake for approx. 1 1/2 hours until it looks ready

Made this last week, and again for Shabbos. And is now a #1 kugel on my list! My family loved it.
