This is a delicious, soft kugel almost like a souffle. I make it for Shabbos almost every week.
3 large zucchini
½ cup oil
2 tsp salt
2 large onions - chopped
1 black pepper to taste
¾ cup flour
Wash zucchini. Cut off off ends. cook on low flame in 2 inches of water until soft.
Cool zucchini in sieve. squeeze out remaining liquid.
preheat oven to 350 degrees. Prepare 9x13 pan with cooking spray.
In a large bowl, mash Zucchini and add oil, eggs, salt , pepper, chopped onions (raw) and flour.
Mix well and pour into prepared pan
Bake for approx. 1 1/2 hours until it looks ready
