This is a delicious, wholesome, filling soup that my young daughter asks for seconds and thirds for.
I personally enjoy adding shredded mozzarella cheese to my hot bowl of soup. It is delicious like that!
1 large onion
6 garlic cloves
2 large zucchini
1 large sweet potato
1 medium parsnip
1 small celery root
1 cup soup pasta
5 tsp salt
1 cayenne pepper - to taste
1 Tbsp dried dill weed
2 Tbsp parsley flakes
2 Tbsp oil - for sauteing
Chop onions and garlic and saute in an 8-10 quart pot
coarsely chop all vegetables and add to onions and garlic
boil water in kettle and pour over vegetables.
let simmer for 1 hour
add pasta I(I use Ditalini) 20 minutes before serving and bring back to boil so pasta will cook
Variation - add1 cup of barley instead of pasta (add with veggies and cook for longer until ready)
