Always a big hit!
¾ cup sugar
3 Tbsp flour
1 Tbsp cornstarch
⅛ tsp salt
1½ cup soy milk or nondairy creamer
3 egg yolks, lightly beaten
¼ cup unsweetened chocolate(or 6tbsp cocoa and 2 tbsp marg)
2 Tbsp margarine
1 tsp vanilla
1 graham cracker crust
1 container rich's whip, whipped
In a medium saucepan on medium heat, mix sugar, flour, cornstarch, and salt.
Stir in soy milk, egg yolks, and melted chocolate.
Add margarine and stir constantly until mix is thick and bubbling
Remove from heat and mix in vanilla
Pour into crust and cool at room temp and refrigerate for at least 2 hours.
Put on whipped cream before serving. (optional: use peeler to create chocolate shavings from unsweetened chocolate to top the whipped cream).
