These are light and fluffy...after trying many recipes, these are my family's favorite for Sunday breakfast. Adapted from Martha Stewart's Buttermilk Pancakes from Living in 2002.
2 cup flour
2 tsp baking powder
1 tsp baking soda
Â½ tsp salt
5 Tbsp sugar
2 cup milk
4 Tbsp butter, for griddle
Whisk together flour, baking powder, baking soda, salt, and sugar. Add the eggs and milk and whisk to combine. The batter should have small to medium lumps.
Heat griddle to 375F or greased skillet over medium high heat. Brush with butter (or use non stick baking spray). Pour the batter to form pancakes, leaving them at least 2 inches apart.
When bubbles form and pancakes are lightly browned on one side, about 2 1/2 minutes, flip. Cook an additional minute. Repeat with remaining batter.
