INGREDIENTS













  • 1 tsp paprika










  • 1 tsp ground ginger










  • ½ tsp ground coriander










  • 1 whole chicken










  • 1 tsp coarse salt










  • 1 tsp black pepper










  • 2 medium sweet potatoes, peeled, halved, and cut into ½ inch










  • 2 medium carots cut into ½ inch pieces










  • 1 orange, unpeeled, cut into wedges










  1. in a small bowl, combine spices. season chicken with salt and pepper, then rub with spice mixture



  2. Place in a large dutch oven or heavy pot with tight lid. Arrange veggies around the chicken and add 1/2 cup water.



  3. Cover and roast at 450 for 30 minutes. remove lid and roast until cooked, about 30 minutes



  4. (alternative: cook in the oven in a regular pan. cover with foil for the first 20 minutes, then uncover until chicken is cooked through)
