Perfect for the fall weather!
1 tsp paprika
1 tsp ground ginger
½ tsp ground coriander
1 whole chicken
1 tsp coarse salt
1 tsp black pepper
2 medium sweet potatoes, peeled, halved, and cut into ½ inch
2 medium carots cut into ½ inch pieces
1 orange, unpeeled, cut into wedges
in a small bowl, combine spices. season chicken with salt and pepper, then rub with spice mixture
Place in a large dutch oven or heavy pot with tight lid. Arrange veggies around the chicken and add 1/2 cup water.
Cover and roast at 450 for 30 minutes. remove lid and roast until cooked, about 30 minutes
(alternative: cook in the oven in a regular pan. cover with foil for the first 20 minutes, then uncover until chicken is cooked through)
