1 cup sweet applesauce (can use kumquat applesauce on Cook Kosher)
1 cup pecans, chopped
2 Tbsp sugar (for topping)
¼ tsp cinnamon (for topping)
¼ tsp all-spice (for topping)
¼ tsp ground nutmeg (for topping)
Preheat oven to 400°F
Stir together the flour, baking powder, baking soda, spices, and salt in a bowl. Whisk together the eggs and brown sugar in a large bowl until combined then slowly add margarine, whisking until mixture is creamy.
Stir in sweet homemade applesauce, then fold in flour mixture until just moistened.
Stir in the chopped nuts and divide batter among 12 greased (or paper lined) muffin cups.
Stir together all of the topping ingredients and sprinkle on top of the unbaked muffins.
Bake until muffins are golden and the tops look cracked, around 20 minutes. Cool in the pan for around 5 minutes, then remove muffins from pan and cool slightly. Enjoy!
