This is one of my husband's specialties. It sometimes doesn't make it all the way to the table, since everyone keeps sneaking "tastes" out of the pan before they're served!
10-12 small gold potatoes
8 cloves garlic, crushed
6 tsp dry basil
¼ cup olive oil
¾ tsp salt
½ tsp black pepper
Preheat oven to 400℉ degrees. Roast potatoes, skin on, for about 30 minutes or until thoroughly cooked and crisp on the outside.
Remove from oven and smash each potato by crushing it with a fork to break the skin and slightly flatten it.
In a large bowl, mix the remaining ingredients. Add the smashed potatoes and toss to coat.
