Served with mashed potatoes this chicken is a winner!
1-2 lb boneless skinless chicken breasts
4 Tbsp Olive oil
2 red or green bell peppers
1 onion chopped
4 garlic cloves
Â½ cup flour
2 Tbsp capers
In a large frying pan, saute peppers in 2 Tbspn olive oil with onions, garlic and some salt.
Put the vegetables in a baking pan and sprinkle lemon juice on top of them.
Add the 2 Tbspn of olive oil to the frying pan. Dip chicken breast in flour, then saute them until slightly brown on each side.
Put the chicken into the baking pan and squeeze the remaining lemon juice on top of the chicken.
Sprinkle the capers on top.
Cover and bake at 350 for one hour.
