A quick, easy and so very moist and delicious muffin. Best of all, this doesn't need a mixer. It takes minutes to prepare and freezes great. The perfect muffin for breakfast, brunch or any time!
3 cup flour
2 cup sugar
½ tsp salt
2 tsp baking soda
½ cup cocoa
2 cup milk
2 tsp vanilla extract
⅔ cup oil
- (-) cheese filling-
16 oz unwhipped cream cheese
⅔ cup sugar
1 cup optional-mini chocolate chips
In bowl, by hand mix first 5 ingredients(dry ingredients). Add milk, oil and extract. Mix all together until smooth.
Spray or oil muffin pan well. This can be made in mini or regular muffin tins. Disposable muffin pans are the perfect size.
Fill muffin tins 2/3 full, about 2-3 tablespoons of batter.
Mix together cream cheese, eggs and sugar well. Add chocolate chips slowly.
Place 1 tablespoon of cheese mixture in center of muffin batter.
Place in oven and bake on 350 for 20 minutes. Let cool a few minutes before you remove from pan. Enjoy!
