These are delicious (you don't miss the flour), freeze well (I usually make two batches) and are great for guests (or yourself!) with gluten-free diets...
1 cup chunky peanut butter
1 cup packed brown sugar
1 tsp baking soda
½ tsp vanilla extract
1 cup chocolate chips (about 6 oz)
Preheat oven to 350F.
Mix first 5 ingredients, then fold in chocolate chips.
Using moistened hands, form generous 1 tbsp. cookie dough into balls.
Arrange on ungreased baking sheets, 2 inches apart.
Bake cookies about 10-12 min., until puffed, golden on the bottom and still soft to touch in the center.
Cool on sheets 5 minutes; finish cooling on wire racks
