A basic winter side dish - with a delicious touch of garlic. Yum! Sprinkle with a touch of grated Parmesan cheese. Double Yum!
1 Medium Butternut Squash, cut into 1 inch cubes
1 Tbsp Minced Parsley
1 Tbsp Olive Oil
1 Garlic Clove, Minced
½ tsp Salt
¼ tsp Black Pepper
Preheat oven to 400.
In a large bowl, combine the parsley, oil, garlic, salt and pepper. Add squash and toss to coat.
Transfer to an ungreased baking dish. Bake, uncovered, at 400 degrees for 1 hour or until squash is just tender. Stir occasionally.
Note: when you cut the squash, make sure that each piece is similarly sized - otherwise it won't bake evenly.
