A basic winter side dish - with a delicious touch of garlic. Yum! Sprinkle with a touch of grated Parmesan cheese. Double Yum!

INGREDIENTS













  • 1 Medium Butternut Squash, cut into 1 inch cubes










  • 1 Tbsp Minced Parsley










  • 1 Tbsp Olive Oil










  • 1 Garlic Clove, Minced










  • ½ tsp Salt










  • ¼ tsp Black Pepper










  1. Preheat oven to 400.



  2. In a large bowl, combine the parsley, oil, garlic, salt and pepper. Add squash and toss to coat.



  3. Transfer to an ungreased baking dish. Bake, uncovered, at 400 degrees for 1 hour or until squash is just tender. Stir occasionally.



  4. Note: when you cut the squash, make sure that each piece is similarly sized - otherwise it won't bake evenly.
