INGREDIENTS













  • 3 (15 oz) Assorted cans of beans (e.g. black, kidney, cannelini)










  • 1 (15 oz) Can sweet corn










  • 1 Green pepper, diced










  • 1 Red pepper, diced










  • 1 Red onion, diced










  • ¼ cup Fresh cilantro or parsley, chopped










  • ¼ cup Olive oil










  • ½ cup Red wine vinegar










  • 3 Tbsp Fresh lemon or lime juice










  • 2 Tbsp Sugar










  • 1 Tbsp Salt










  • 1 Clove garlic, crushed










  • ½ Tbsp Cumin










  • ½ Tbsp Ground black pepper










  • ½ Tbsp Chili powder










  • 1 pinch Cayenne or hot sauce, to taste










  1. Combine beans, corn, peppers, cilantro, and onion.



  2. In small bowl, combine oil, vinegar, lemon juice, sugar, and spices.



  3. Pour dressing over vegetables, and stir. Tastes best if allowed to sit in the fridge for several hours or overnight.
