a delicious, wholesome soup, which is very versatile, and u can add anything in it to make it your own.. I add chopped spinach to give it a burst of beautiful color and add more nutrition and taste! you can make it milchigs and add milk or cheese at the end, but it ends up being so creamy tasting,u don't even really need to!

INGREDIENTS













  • 2 Tbsp oil










  • 2 shallots or onions










  • 5 cloves garlic










  • 1 squash










  • 5 potatoes cut in chunks










  • ½ cup frozen spinach










  • 1 tsp salt, pepper, to taste










  1. heat soup pot. add oil to cover bottom of pot. saute onions or shallots.



  2. add chopped squash



  3. when squash is soft, add garlic and saute till fragrant



  4. add potatoes, mix, and add water to cover ingredients.



  5. add spices to taste



  6. cook till bubbling, add in a few handfuls of chopped spinach can even be frozen.. this step is optional.. but adds beautiful color and taste..



  7. blend soup and taste, adjust spices and add more water if necessary.
