INGREDIENTS













  • 5 Medium Idaho Potatoes, peeled










  • ⅓ cup oil










  • 1 tsp salt










  • ⅛ tsp pepper










  • 1½ tsp paprika










  1. Slit potatoes 1/8 thickness, cutting almost through. Place potatoes into a bowl of ice water and place in the refrigerator for approximately 1-1/2 hours to obtain fan effect.




  2. Mix oil and spices.




  3. Remove potatoes from bowl, pat dry and place in a pan. Brush with oil and spices. Bake covered at 400 for 1 1/2 hours, basting frequently. Bake uncovered for additional 1/2 hour, continue basting pototes with oil every 10-15 minutes.




  4. PS you can sprinkle some dried parsley for color.
