
Inspired by the Popeye's franchise, this recipe serves up a delicious fried coating that works for chicken or fish.

INGREDIENTS
3 cup flour
3 eggs, beaten
16 pieces of chicken (or fish filets)
1 oil for frying
3 Tbsp garlic powder
3 Tbsp black pepper
2 Tbsp paprika
2 Tbsp onion powder
Mix the flour and spices divided between 2 shallow dishes/platters. Keep beaten eggs in 3rd shallow dish.
Fill pan 1/2-1inch high with oil and heat on medium until ready.
Arrange dishes near stove as flour, egg, then flour.
Dredge chicken in the flour until coated.
Dip piece in egg until moistened on all sides.
Dredge in next flour dish and add to heated oil.
Do not crowd pan. Cook until golden brown on each side. Best eaten fresh.
If reheated, do not cover tightly or moisture will make the batter soggy.
