Born of an emergency or I never would have realized it was possible. Instant hit, healthy, and a great way to use up extra rice and/or sneak extra veggies into your family's diet!
I was vaguely basing this on a recipe that called for sesame oil and a slew of other ingredients - most of which I didn't have and definitely didn't have time for. I ended up just using plain soy sauce and the result was fantastic! Nobody believed me...

INGREDIENTS













  • 4 cup cooked rice










  • 3-5 veggies - whatever you have (suggestions below)










  • ½ red and/or peppers










  • ½ onion










  • 3 Tbsp oil










  • 1-2 Tbsp soy sauce










  1. I made up quantities because they were a required field, but you can totally make it up depending what you want to eat.
    Cook rice according to package directions, if you haven't already. Let it cool and dry out a bit so it isn't very sticky anymore.




  2. Chop your veggies. I used two different colors of pepper, some onions, and broccoli and it was amazing, but it would be great with different permutations as well.



  3. Heat oil in a large frying pan or skillet. Toss in the chopped veggies and stir-fry them for a few minutes.



  4. When the veggies start to get soft and fried-looking, add the rice by crumbling it in with your hands and mixing as you go. Stir/fry until it gets warmed through and starts to brown a little.



  5. Add soy sauce while still frying and mix everything through for another minute or so.



  6. Serve and enjoy!
