I made this up after having something similar at a restaurant and then craving it all week! It is a great side for Shabbos, and you can make it well ahead of time.

INGREDIENTS













  • 1 Red Pepper, finely chopped










  • ½ Red Onion, finely chopped










  • 1 Package quinoa










  • ¼ cup Balsamic Vinegar










  • ⅛ cup Olive Oil










  • 1 Tbsp Brown Sugar










  • ⅛ cup Water










  1. Cook Quinoa according to package directions. Set aside to cool.



  2. Combine olive oil, vinegar, water, & sugar. Add salt, pepper, garlic powder to taste. Mix well.



  3. Mix all ingredients together, including pepper and onion. Serve at room temperature.



  4. * Optional: Add chopped olives.

Easy and good. I did add olives. I also added fresh garlic.
