This is a combination of two recipes to make an award winning, great tasting muffin. Perfect as a side dish, even when you have those guests that you gotta impress... can even be done without the mixer!
Can be made with a can of pumpkin or freshly cooked pumpkin or butternut squash.

INGREDIENTS













  • - Muffin:










  • 3 cup Flour










  • 2 cup Sugar










  • 1½ tsp Cinnamon










  • ½ tsp Baking Powder










  • ½ tsp Baking Soda










  • 15 oz Cooked butternut squash










  • 1 cup Oil










  • 3 Eggs










  • - Topping:










  • ¼ cup Brown sugar










  • ½ cup Oats










  • ⅓ cup Flour










  • 1 pinch Salt










  • 2 oz Margarine










  1. Combine first five ingredients in a bowl.



  2. Mash the cooked Butternut squash and measure 15oz. Add to mixture.



  3. Add oil and eggs and mix.



  4. In a separate bowl combine all the topping ingredients to make a crumb. (if necessary add a little extra margarine)



  5. Sprinkle on top of muffin. Place in oven and bake 30-40 mins on 350.

These are really good, It's perfect as a side dish and even as a snack. Very Tasty and they look pretty too.

Amazing!!! Not to sweet like the typical carrot muffins. The crumbs on top give it an added flavor and crunch.
