This is a replica of a delicious salad I ate in SoYo London. It can be made with couscous or quinoa.
2 cup Quinoa
2 Sweet potatoes cubed in small pieces
½ cup Flaked almonds
150 gram Feta cheese
1 Chick peas tin optional
¼ cup Olive oil
1 Tbsp Chopped fresh parsley
1 Tbsp Chopped fresh coriander
- Salt and pepper
Rinse quinoa well with lots of water for 2 mins. Then cook according to package instructions.
Place cubed sweet potato on a baking sheet, sprinkle with olive oil and bake for 20 minutes till soft.
Combine the quinoa, sweet potato, feta cheese crumbled, almonds and chick peas if using. Mix the dressing ingredients and pour over salad.
Serve cold or at room temp.
