Yummy potato latkes without all the grease. I once baked a batch of these latkes and fried another barch. Once the latkes cooled, I couldn't tell which batch was fried and which was baked! The food processor is not necessary but very helpful.
3 lb potatoes, peeled
2 large onion
¼ cup matza meal
1 tsp salt
¼ tsp pepper
Grate onion using the s blade in your food processor.
Switch the s blade for the shredding disc and shred the potatoes.
In a large bowl, combine potatoes and onions with remaining ingredients.
Line 2 large baking pans with parchment paper. Form latkes and place on baking sheet.
Bake on 400 until golden. Flip and bake for 5 more minutes.
