Yummy potato latkes without all the grease. I once baked a batch of these latkes and fried another barch. Once the latkes cooled, I couldn't tell which batch was fried and which was baked! The food processor is not necessary but very helpful.

INGREDIENTS













  • 3 lb potatoes, peeled










  • 2 large onion










  • 2 eggs










  • ¼ cup matza meal










  • 1 tsp salt










  • ¼ tsp pepper










  1. Grate onion using the s blade in your food processor.



  2. Switch the s blade for the shredding disc and shred the potatoes.



  3. In a large bowl, combine potatoes and onions with remaining ingredients.



  4. Line 2 large baking pans with parchment paper. Form latkes and place on baking sheet.



  5. Bake on 400 until golden. Flip and bake for 5 more minutes.
