I like to try new things for each Holiday. People always expect you to make potato latkes and serve it with apple sauce and sour cream, last Chanukah was my first Chanukah as a married woman so I wanted to do something different . So I came up with a sweet potato latke recipe and served it with home made Carmel Apple Sauce. Everyone loved it! The Carmel apple sauce is really easy, I just melted carmel nuggets in a melting pot and i jucied apple in a jucier and mixed it with the carmel.

INGREDIENTS













  • 2 Large Eggs, lightly beaten










  • ⅓ cup Flour










  • 1½ tsp Salt










  • ¼ tsp Cardamom










  • ¼ Pepper










  • 3 Large Sweet Potatoes, peeled and grated










  • 3 Medium Yukon Potatoes, peeled and grated










  • 1 Vegtable Oil for Frying










  1. Whisk eggs in a large bowl. Add flour, salt, cardamom, and pepper. Add grated potatoes, and mix well.



  2. Fill a deep frying pan with oil. It should be enough oil for it almost to be deep fried. Put heat on medium heat and wait for oil to be super hot. (Should bubble)



  3. I use 2tbsp of batter for each latke, and I fit about 5 in my frying pan. But you can do whatever is right for you. Make sure there is room for it to spread and for you to flip.



  4. Cook each latke 2 minutes on each side. Place on paper towel to dampen oil. I drizzeld a bit on the carmel apple sauce I use but serve it with whatever you love!
