A delicious side dish for a special occasion. This kugal tastes almost like cake, but has that smooth, creamy consistency from the sweet potatoes. A real winner!

INGREDIENTS













  • 2 Greased 8" round pans










  • 3 cup Mashed sweet potato - about 6 small potatoes










  • 1½ cup Flour










  • ½ cup Sugar










  • 2 Eggs










  • 1 Tbsp Vanilla










  • ¾ tsp salt










  • ½ cup non-dairy creamer or soymilk










  • 1 tsp cinnamon










  • 1½ Tbsp Margarine










  • ¼ cup Flour










  • ½ cup Brown sugar










  • 8 Pecans (opt)










  1. Preheat the oven to 350*



  2. Cook sweet potatoes and blend with a stick blender until creamy



  3. Add the next seven ingredients and mix until smooth



  4. divide in half and spread in prepared round pans



  5. Mix the marg, 1/4 cup flour and brown sugar by hand until you have course crumbs



  6. sprinkle crumbs on the mixtures



  7. Press the pecans on the pie in any design as preferred



  8. Bake at 350* for 30 min or until surface looks darker



  9. This recipe freezes beautifully (just heat uncovered) and can also be made into individual sized portions using muffin tins. ENJOY!!!
