INGREDIENTS













  • 1 can black beans, rinsed & drained










  • 1 can corn, drained










  • 1 stalk celery, sliced or diced










  • 1 green bell pepper, diced










  • 1 red, orange, or yellow pepper, diced (or a few mini peppers)










  • 2 Tbsp vinegar










  • 2 Tbsp oil










  • ½ tsp salt










  • ½ tsp pepper










  • 1 tsp dried basil










  • ½ tsp cumin










  1. Combine all ingredients in a bowl. Mix well. Refrigerate 2 hours and enjoy.
