this dish is great to use when you have some leftover potoatoes
2 cup mashed potatoes
1 egg, lightly beaten
Â¾ cup shredded cheddar cheese
Â½ cup green onions, chopped
1 cup bread crumbs
- oil, for frying
Place mashed potatoes in a large bowl. Let stand at room temperature for 30 minutes. Stir in egg, cheese, and onions. Shape into 1â€™â€™ balls; roll into bread crumbs. Let stand for 15 minutes.
In a skillet, heat 1 inch of oil. Fry potato balls, a few at a time for 2-3 minutes or until golden brown. Remove with slotted spoon. Serve Warm.
