A delicious entre as is or served over a scoop of rice, the blend of these vegetables are delicious and easy.
1 lg onion - diced
3 green pepper - diced
3 zucchini - sm cubes
1 pinch salt & pepper
2 Tbsp oil
Saute the onion & peppers for 10 minutes. Add the cubed squash. Allow to cook for 45 minutes on low flame, stirring occasionally.
Delicious as is or served over a scoop of rice.
