A yummy and easy potato side dish. Use more of less garlic depending on how strong you would like the garlic taste to be.
1 lb small red potatoes cut in half
3 Tbsp olive oil
10 cloves of garlic minced
1.5 tsp dried rosemary
½ small onion diced
½ tsp salt
⅛ tsp black pepper
Preheat oven to 350. Line a cookie sheet with parchment paper or a silicon mat.
Place potatoes and olive oil in a ziploc bag. Shake to combine. Add garlic, rosemary, diced onion, salt and pepper.
Shake bag again to combine. Pour onto cookie sheet.
Bake until potatoes are tender, about 45 minutes. Serve warm.
