The title says it all. One Chanukah, I decided to cut on the calories and bake half of my latkes. I fried the other half of the batch of latkes for those not counting calories. When I tasted a baked latke and a fried latke, I could not taste the difference.
2 Large baking potatoes (about 3 lbs., peeled)
1 Large onion
2 eggs, lightly beaten
Âĵ cup Matza Meal
1 tsp salt
Shred the onion and then the potatoes in a food processor or with a hand grater. Transfer to a bowl.
Add eggs, matza meal and salt to the bowl. Mix well.
Form into patties on a greased baking sheet. Spray the tops of the latkeswith cookies spray.
Bake at 400 degrees for 10 minutes. Flip the latkes over and spray the 2nd side of the latkes with cooking spray.
Bake the latkes for another 10 minutes.
