Easy and versatile. Great and yummy way to eat your veggies :). Feel free to play around with the proportions or add any other vegetable you have lying around the house. I've substituted butter for the oil for a slightly different flavor. You can mix them with pasta or serve or rice.
You can make this in a frying pan on the stove but roasting them in the oven is just easier.

INGREDIENTS













  • 1 Tbsp olive oil










  • 2 green or coloured peppers










  • 3 onions










  • - salt and papper to taste










  1. Slice the peppers into strips.



  2. Slice the onions into thin half rings.



  3. Place your onions and peppers onto a greased cookie sheet. Drizzle with olive oil. Add salt and pepper to taste.



  4. Bake at 400 for 10 minutes or until done.
