I like this recipe because it only needs one vegetable, so if I have celery I have all the ingredients on hand :)
2 Tbsp oil
2 onions, diced
2 clove garlic, diced
4 stalks celery
Â½ cup oatmeal
1 tsp salt
Â½ tsp pepper
Saute onion and garlic in oil until slightly browned.
Add diced celery and sautee additional 2-3 minutes.
Add oatmeal and mix in, cook for 2 minutes stirring occasionally.
Add spices and water to cover. Cook for 45 minutes. Blend very well with an immersion blender.
