I like this recipe because it only needs one vegetable, so if I have celery I have all the ingredients on hand :)

INGREDIENTS













  • 2 Tbsp oil










  • 2 onions, diced










  • 2 clove garlic, diced










  • 4 stalks celery










  • ½ cup oatmeal










  • 1 tsp salt










  • ½ tsp pepper










  1. Saute onion and garlic in oil until slightly browned.



  2. Add diced celery and sautee additional 2-3 minutes.



  3. Add oatmeal and mix in, cook for 2 minutes stirring occasionally.



  4. Add spices and water to cover. Cook for 45 minutes. Blend very well with an immersion blender.
