baby carrots covered in brown sugar
4 bunches of baby carrots
½ cup brown sugar
30 gram margarine
2 Tbsp balsamic vinegar
Preheat oven to 180°C. Put carrots in a large (12-cup) baking dish.
Mix the sugar, margarine and vinegar in a small bowl. Pour over the carrots. Season with salt and pepper. Cover till coated.
Bake in oven, mixing occasionally, for 45 minutes or until the carrots are tender
Arrange on a platter. Drizzle over the glaze to serve.
