This is my all time favorite chicken bottom recipe! Great idea for a change! And delicious served with rice for a full meal.

INGREDIENTS













  • 4 chicken bottoms










  • ½ cup flour










  • 1 tsp salt










  • 1 tsp pepper










  • 2 Tbsp oil










  • 1 onion-diced or sliced thinly










  • 1 green pepper- diced or sliced thinly










  • 1 can crushed/ diced pineapple










  • 2 tsp brown sugar










  • 2 tsp soy sauce










  • 2 tsp corn starch










  • 2 tsp chicken broth/ water










  1. Dip chicken bottoms in flour combined with salt and pepper.



  2. Heat oil in skillet and fry chicken on both sides until crispy. Bake on 350 covered for at least an hour and a half. (The longer you bake chicken the softer it'll be)



  3. In the same skillet with the remaining oil, saute onion and pepper until tender- about 5 minutes. Add pineapple, brown sugar and soy sauce. Combine corn starch with liquid and add to skillet.



  4. Simmer 5-10 minutes until sauce is thickened.



  5. Pour on top of chicken, and bake chicken for an additional 10 minutes uncovered.
